Here is the recipe for my rich, delicious double chocolate chip cookies ⬇️
Ingredients:
makes approximately 9
125g of room temperature butter
1 large egg
1/4 cup brown sugar
1/4 cup caster sugar
1 1/2 cups plain flour (sifted)
1 tsp vanilla extract
3 tbsp cocoa powder (sifted)
1/2 tsp baking powder
2/3 cup milk chocolate chips
Pinch of salt
Milk (if needed)
toppings: (optional)
Melted white chocolate + 1tsp of milk
Extra chocolate chips
Method:
Step 1:
Preheat oven to 180 degrees fan forced. Line a baking tray with baking paper and spray with oil.
Step 2:
In a large bowl, cream butter and sugars until combined.
Step 3:
Replace 3 tbsp of flour with cocoa powder.
In a seperate bowl combine the salt, baking powder, flour, chocolate chips and cocoa powder.
Step 4:
Slowly add egg and vanilla extract to the butter mixture, with 2 tbsp of sifted flour mixture to stop the mixture from scrambling.
Step 5:
Add the rest of the flour mixture to the butter mixture and mix until a dough forms. Add milk 1 tbsp at a time if the mixture is too dry.
Step 6:
Roll cookie mixture into small balls, place on a prepared tray and flatten slightly. Add more chocolate chips on top of cookies if desired.
Step 7:
Bake in preheated oven for about 12-15 minutes or until firm and cooked throughout the middle.
Step 8:
Once cooked, transfer to a cooling rack so cookies can cool completely. When the cookies are cooled, drizzle with the white chocolate mixture. Store in an air light container for up to 1 week.
