Sugar free oaty fruit cookies

These healthy, sugar free cookies are super easy to make and are tasty. I used a mixed bag of dried fruits for the cookies, you can easily substituted with other fruits or ingredients of your choice.

Makes approximately 12

Sugar free oaty fruit cookies

Ingredients:


1 cup wholemeal flour (sifted)

1 cup rolled oats

115g unsalted softened butter

1/2 tsp baking soda

A pinch of salt

1 free range egg

1 tsp vanilla extract

1 cup of mixed dried fruits (cranberries, sultanas, raisins, apricots etc.)



Method:


1. Preheat oven to 180 C (fan forced) and line 2 baking trays with greaseproof paper.


2. Tip the oats, flour, dried fruit, baking powder, and salt in a large bowl and mix together.


3. In a separate bowl crack the egg and mix with the vanilla extract until combined.


4. Using a baking spatula, slowly add the butter into the flour mixture, and mix thoroughly.


5. Add the egg/vanilla to mixture and mix in. Roll the mixture into small round balls, flatten slightly and place on the prepared trays.


6. Bake In the oven for about 12 minutes, or until cookies have a light golden colour, (check the bottom of the cookie) and are moderately soft in the middle.

7. Once cooked, carefully remove cookies from the oven and when they have cooled down transfer to wire racks. They taste great eaten slightly warm or cold. Once cooled completely store in an airtight container.


Notes:

-These cookies were so fun to make, and are great as a snack, breakfast, or even a healthy dessert! (:


- So simple to make. You will most likely have all these basic ingredients at home already which is great!

- You can easily modify the recipe and add in different fruits, chocolate chips, nuts, or any ingredients you desire.
