A Victoria Sponge Cake is a vanilla flavoured cake that is light and airy. The cake consists of two cake layers which are traditionally sandwiched together with whipped cream/ buttercream and jam.

Here are some some helpful tips when making a Victoria sponge cake;

1. Replace your baking powder regularly

Baking powder is sensitive to moisture and warmer climate this means, that it will only last between six months and a year. So that the baking powder helps your cakes rise, you should check it’s expiry date.

2. Cream the butter and sugar together

When you cream butter and sugar together, your cakes will have a lighter taste and it increases the air in the cake which then makes your cake more airy. It’s important when creaming butter and sugar together that the butter is at room temperature, and you cream the mixture until it’s pale in colour.

3. Sift the flour multiple times

To improve your cakes you should sift the flour multiple times. Once the flour is sifted it will help break down lumps in the batter and your cake will be fluffy.
